Cucho Hernandez led the Hornets to victory with an impressive brace against Ralph Hasenhuttl’s side.
Hernandez took advantage of an error by Mohammed Salisu to beat Fraser Forster from a tight angle on 14 minutes.
The Colombia international scored again just 20 minutes later after meeting a cross by Juraj Kucka.
Mohamed Elyounoussi put Southampton on the scoreboard in the 45th minute.
Watford are now just one point away from climbing out of the Premier League’s relegation zone.
