The 25-year-old was set to feature on the same bill which is being headlined by the World Welterweight title clash between Radzhab Butaev and Alexander Besputin live on Sky Sports.
Matchroom posted: “Due to a virus @hughiefury has unfortunately had to pull out of his fight tonight in Monaco.”
Fury had been hoping to use the fight as a stepping stone to a crack at a world title next year.
But this will severely hit those plans.
He is now likely to face a rescheduled bout with Czech Republic fighter Sour in the spring of 2020.
Brit Fury had been out of the ring since he lost to Alexander Povetkin on August 31 at London’s O2.
He was fighting for the WBA international crown.
Fury, 25, lost on a unanimous decision.
He had previously beaten Samuel Peter by technical knockout.
However, he lost a majority decision to Joseph Parker – the only man to beat Anthony Joshua’s conqueror Andy Ruiz Jr in 2017.
The Mancunian’s fight record stands at 26 fights, with 23 wins and three defeats.
Along with the Butaev-Besputin top bout in Monte Carlo tonight, Cecilia Braekhus takes on Victoria Bustos in a women’s welterweight bout.
Joe Cordina takes on Enrico Tinoco in a WBA continental super-featherweight title bout.
Victoire Pitaeu faces Raphaelle Lachaume in a super-featherweight bout.
There is no new date for the Fury-Sour clash.
On behalf of my self @hughiefury we want to thank @MatchroomBoxing @EddieHearn for this opportunity ‘ we are very sorry this fight can not happen also thanks to all our team @MTKGlobal @HennessySports @AppliedNutri
